In actuality, Chablis is the name of a town in Burgundy, France renowned for producing some of the cleanest, purest expressions of Chardonnay on the planet. The cool climate and limestone-clay (Kimmeridgen) soil produce wines that are lean and refreshing with crisp lemon citrus, Granny Smith apples and chalky minerality.
