Late in the 19th Century, the Bouchon family left Bordeaux for the warmer clime of Chile's Maule Valley. Now in their fourth generation, the family has employed the expertise of terroir consultant Pedro Parra in an effort to more closely work with the area's natural advantages. The fruit from their dry-farmed, 100-year-old País vines - which are allowed to climb up the nearby trees - is hand-harvested, fermented with native yeasts, and aged in concrete for four months before bottling. Rustic, wild, juicy, and free, its nose opens with fresh strawberry and sour cherry, with countryside floral notes woven throughout. The palate's crunchy fruits lead into herbaceous tones, with youthful acidity and pleasantly grippy tannins. Consider serving a slight chill, perhaps alongside tomato-based pastas, seafood, or light and salty cheeses.
