Finca Don Carlos is located at about 3,300 feet of elevation in the high-desert foothills of the Andes mountains. This high elevation gives their sustainably & organically farmed vineyard a long, cool growing season that produces incredibly rich and complex fruit. Calathus Chardonnay is fermented in stainless steel tank before it gets a fairly quick, three month oak treatment in first-use French barrels before bottling. This short time in barrel helps to preserve the acidity and bright, fresh fruit characteristics of this high-altitude gem imparts just a hint of vanilla and spice to the wine before bottling. No malolactic fermentation, so if you're looking for a buttery, oaky, tropical tasting Chardonnay like the typical California offering, then this isn't for you. Closer in style to a southern Burgundy (that would cost 2-3 times the price) this amazing wine isvVibrant, clean and refreshing. Aromas and ﬂavors of pear, peach, citrus and mild notes of rocky minerals. Complex, intense and well balanced in the mouth, with a smooth tannic structure and a fantastic long ﬁnish.
