Michael's Grilled Salmon with Mustard-Dill Sauce

GRILLED SALMON WITH MUSTARD-DILL SAUCE (Serves two)
Ingredients
For the Salmon 
  • 2 Salmon Fillets
  • About 1 Tablespoon olive oil
  • salt and pepper
For the Sauce
  • 1/2 cup mayonnaise (or plain yogurt)
  • 1/3 cup grainy French mustard (or smooth Dijon)
  • 2 Tablespoons chopped fresh dill (or 1 teaspoon dried)
  • 1/2 teaspoon lemon zest
  • salt and pepper
Procedure
1) Pour yourself a glass of Lone Birch Pinot Gris.
2) Preheat Grill (or oven) to medium high (400 degrees for oven).
3)  Brush salmon on all sides with olive oil and season to taste with salt and pepper.
4)  Make sauce by simply combining all ingredients in a bowl, stirring until well mixed.
5) Cook Salmon to desired doneness (depending on heat of grill and thickness of salmon around 3 minutes per side for medium).
6)  Serve with a dollop of sauce on the side and rice, potatoes, green beans, or whatever sounds good or is convenient.
